Cucumber Watermelon Salad.

This salad is great for days when you feel the heat of summer and want a refreshing lunch to soothe your Qi.

1 cup watermelon
1 cup cucumber
1 Tbs. minced fresh mint
A handful of almonds chopped
1/2 cup quinoa (optional)
1/4 cup olive oil
A pinch of sea salt and pepper
1 Tbs. maple syrup (optional)
1/4 cup lemon juice
