Dandelion & Asparagus warm salad w/ lemon mint vinaigrette
*A bunch of Dandelion leaves (wild harvested from your front lawn…watch for dog poop!)
*A large handful of Asparagus
*dry roast ¼ cup of pumpkin seeds (let cool)
Dressing:
*1 cup olive oil
*1/4 cup lemon juice
*1 Tbs of honey
* 1Tbs fresh mint
* ¼ tsp sea salt and pepper
* ½ tsp mustard powder
Lightly steam veggies for 3-5min, let cool and toss with vinaigrette. Serve with alfalfa sprouts and toasted seeds.
